INGREDIENTS

Catalan Cream - the most popular sweet from the Autonomous Community of Catalonia of Spain. And rightly so!
Considered the farthest cousin of the classic burnt sugar cream, Catalan cream is a light and dietetic dessert, very easy to make. Here's a simple recipe:

Put on warm the cream with vanilla, cinnamon and orange peel. The yolks rub well with sugar until they are white, then add the wine.

Pour a third of the hot cream over the yolks, stirring continuously with a flesh. Then pour the other side, stirring slowly to homogenize. The composition is squeezed, then shaped.

Put the shapes on the oven tray, pour hot water between them to bake faster and bake.

Bake for 35 minutes at 110 ° C, then cool for several hours. When serving, sprinkle sugar, then boil with alcohol to create a caramel crust over the cream.
