家常菜之臊子蒸蛋 Steamed egg with topping

晚餐讲究精而少,想要省时间又能做出可口的饭菜,不妨试试水蒸蛋。

水蒸蛋是我儿时的记忆,印象中家家户户都有自己的独门绝技水蒸蛋,因为做法极易简单,无需复杂的厨具和食材。水蒸蛋的口感细腻爽滑,入口即化,鸡蛋中含有丰富的蛋白质、脂肪、维生素和铁、钙、钾等人体需要的矿物质,可谓营养丰富,老少皆宜。

如果觉得纯水蒸蛋比较单调,可以在topping上下一些功夫,根据个人的口味添加海鲜、猪肉臊子、鸡肉末、酱油、香菇、火腿、玉米等等,既能丰富口感,又能提升颜值。

今天晚上我也是兴致高涨,做了好几年没碰过的水蒸蛋。

准备材料:

猪肉末 100g (纯水蒸蛋不需要肉末),鸡蛋 3只,食盐 2g,料酒 10g,葱花 5g,猪油 25g

水蒸蛋制作过程:

将鸡蛋破壳入碗,按照鸡蛋:温水 = 1:1.5的比例搅拌均匀,边搅拌边放入盐。搅拌的时候蛋液上会出现很多细腻的气泡,一定要将气泡捞出,否则蒸熟后气泡会变成蜂窝孔,既影响美观也影响口感。可以隔着滤勺,将蛋液倒入碗中,让气泡自动被过滤掉。

蒸锅烧开水,待内面水开上气后放入碗,碗面倒扣上一个小盘子或者小碟子,避免蒸锅有水滴落在鸡蛋羹外表。一次性蒸15分钟左右即可。出锅后放上猪油,口感更柔软浓郁。

喜欢带点花样的可以在上面放上臊子或者酱油,既美观又美味。

Ingredients:

100g pork mince (option), 3 eggs, 2g salt, 10g shaoxing cooking wine (option), 5g scallion, 25g lard

Method:

Beat eggs, add cooled boiled water to egg and mix well ( water : egg = 1.5 : 1 ). Strain the mixture through a sieve into a steam-proof dish. Or, you may remove the bubbles with a spoon.

Steam for 15 minutes.

Top the steamed eggs with a dash of soy sauce , scallion or lard, whatever you want.

初次尝试水蒸蛋,成品虽然不算美观,但是味道还不错,下次继续尝试。
