Bring some colour in your life with this gorgeous super healthy soup
Ingredients:
1 onion
3 gloves garlic
3 potatoes
2 beetroot
About 750ml vegetable stock
Some olive oil, soy heavy cream, optional chilli
Recipe:
1. Cut all the veggies into small pieces. Put the diced potatoes in some warm water for a few minutes.
2. Roast the diced onion in a big cooking pot and add the olive oil. After 3 min add garlic potatoes and beetroot and roast again for 8-10 min.
3. Deglaze it with the stock. All the veggies have to be covered with the stock.
4. Cook the veggies on middle heat unit the potatoes are soft
5. Now puree the soup and add optional some stock to get the thickness you prefer
6. If you want it more creamy add some soy or other plantbased cream.
7. Now its time for you favourite spices and the soup is ready to serve
