Hi bloggers and Amazing Drinks community! Today I’m going to share a fermented drink made from the pineapple peels left over from making pineapple and cucumber juice earlier. You might already be familiar with this drink—it’s called Tapache. This traditional Mexican drink has a unique flavor: tart, slightly sweet, and refreshing. Alright, let’s get started
Ingredients:
- pineapple peels
- 1 cinnamon stick
- 5 cloves
- 1 thumb-sized piece of ginger
- 50 grams of Javanese palm sugar
- 500 ml water
- ice cubes

- Clean the pineapple peels thoroughly

- Drain

- Prepare the cinnamon stick, cloves, ginger, and palm sugar

- Place the pineapple peel into a container

- Add the cloves

- Add the ginger slices

- Add water until the container is full

- Add the Javanese palm sugar

- Press down on the pineapple peel until it is submerged in the water

- Cover the container loosely and let it sit for 48 hours or longer up to 3–4 days is also fine

After 48 hours, open the container

- Prepare ice cubes, then pour the Tapache into a glass
