Another way to incorporate vegetable in our meal is to make a side dish. This recipe is from korean cuisine and you will be surprise how easy and tasty it's gonna be. It's so good that i can finish it in one sitting.

I use a cashew nuts for this dish instead of the traditional toasted sesame seeds, and it's still taste delicious and authentic.
Ingredients
500 gm baby spinach
1 or 2 cloves garlic, finely minced
1 Tbsp soy sauce
1 tsp sesame oil
Scallions, chopped
Toasted sesame seeds or cashew nuts

Blanced the spinach in a boiling water for 30 sec to a minute, depends how thick the leaves would be.

Drain, soak and wash with cold water a couple of times.

Gently squeeze the water and form a ball, cut in quarters.

Transfer into a bowl, add the minced garlic, sesame oil and soy sauce. Mix well to distribute all the flavours.

Add the toasted sesame seeds or roasted cashew nuts for a nutty and crunchy taste.
Alternatively, you can also use shredded kale leaves with same procedure and is equally delicious.
