Hello and welcome to another Steemit recipe post from @Simplerecipes . Today I will be explaining how to prepare/cook a fresh and healthy Hash brown pie to share with friends and family. I usually prepare this recipe for breakfast, brunch and dinner. I hope you enjoy!
Ingredients
5 large potatoes peeled and cut into hash brown cubes and deep fried.
5 eggs
3 tablespoons yogurt
One onion diced
One red bell pepper diced
One green bell pepper diced
One medium carrot shredded
3 tablespoons mashed garlic
1/2 teaspoon cinnamon powder
½ cup of diced parsley
½ cup of shredded mozzarella cheese
One cup of cooked any of the following meats: Beef, Chicken, Bacon, Sausage , or any lay over available meat.
Olive oil
Salt, pepper, paprika, Cajun.
1 teaspoon of each dried basil, oregano, thyme
Method
Preheat oven to 350.

On a cooking pan, add olive oil when it is hot add onion, garlic then stir for 3 minutes and add the other vegetables cook until they become tender. Add the diced cooked meat of your choice. Stir for 3 to 4 minutes then add salt, pepper, paprika and Cajun mix all together until vegetables start to be tender.

In a deep bowl, mix eggs, yogurt, parsley, cinnamon, black pepper then add the diced fried hash browns and meat with vegetables, cheese mix lightly.

Spray oven pan that is lined with parchment paper pour the mix and press with hands firmly to be spread evenly add the mixture on the top.
Bake in a preheated oven at 350 for 20 minutes or until it has nice golden color. Take it out of oven and sprinkle with the cheese and serve hot with the serving sauce.

Prep ahead: Follow all the steps up-to step 3, then wrap and seal well with aluminum foil and keep it in the fridge overnight. On the next day take it out of the fridge and continue with steps 4 and 5.
Note : For vegetarians omit the meat.
