传统美食~皮冻

猪皮冻是用猪皮熬制而成的传统美食,将买来的新鲜猪皮,去除没刮干净的猪毛和里面的肥油,放入适当的调料,进行长时间熬制,把猪皮中的胶原蛋白熬到汤里,冷却后猪皮和汤就凝固到一起,满满的胶原蛋白Q弹十足,切片,沾上料汁,就可美美的食用了。喜欢吃皮冻的朋友和我一起做起来吧!自制皮冻不添加任何化学材料,吃着放心。

一、把新鲜猪皮先放炒锅中煮10分钟,捞出猪皮,水倒掉,趁热将没处理干净的猪毛拔掉,再把猪皮里面的肥油用刀去除干净。(超市也有冻猪皮,猪毛和里面的肥油都处理的挺干净,回家直接先煮一下水倒掉)

二、1斤处理干净的猪皮3斤水的比例熬制,把猪皮切成小丁,汤锅加水,把切好的肉皮了放入汤锅中,加入少许料酒、大料、葱段、姜末、蒜末。

三、汤锅放到火上大火烧开,调小火慢慢熬制1个小时到汤变粘时放入适量盐,关火后把大料捞出,葱姜蒜不用捞出,倒入容器中冷却。冷却过程中搅拌几次,这样肉皮丁会悬浮在皮冻中间,不会全沉到下面,非常Q弹的皮冻就做好了。

四、冷却好的皮冻切片装盘,调碟蒜泥沾料,沾上料汁,就可食用。
